Overnight Chia Pudding

Believe it or not, chia seeds serve a much greater purpose than growing hair on a porcelain head.  They are essentially little nuggets of gold, packed with antioxidants to protect your body from everyday wear and tear.  Because of their high amounts of omega-3 fatty acids, chia seeds have powerful anti-inflammatory properties – as an athlete always covered in bumps and bruises, I try to eat as many freakin’ anti-inflammatory foods as possible.  Oh and chia seeds make you poop like a boss.

That’s why I always have chia pudding ready to go in my fridge.  It is an easy way to eat a ton of chia seeds, and takes just a few minutes to make.  This recipe makes appx. 3 servings and is customizable to your liking.

Ingredients:

Mason Jar

Chia Seeds

Milk of choice – my favorite is canned coconut milk or chocolate almond

Sweetener of choice (optional): think honey, maple syrup, agave, sugar

Toppings: think fruit, nuts, seeds, chocolate, spices, etc.

Directions:

  1. Fill 1/8th of the mason jar with chia seeds.
  2. Add 1 tbsp of desired sweetener and fill to top with milk.
  3. Shake the crap out of it and put it in the fridge overnight.
  4. Top with anything that makes you happy 🙂
