
The Perfect Breakfast Sando
There’s nothing like a beautifully crafted bagel sandwich on a lazy Sunday morning… or any morning, really. Skip the diner chaos and learn the secrets to constructing the perfect breaky sandwich from the comfort of your own home (van).

Ingredients:
- Favorite bagel OR 2 bread
- 1 egg
- 2 bacon strips
- Favorite hard cheese (think parmesan, cheddar, asiago, etc.), grated
- Fresh cilantro
- Arugula
- Avocado
- 1/4″ thick slab of butter
- Large mason jar ring

Directions:
- Cook bacon and set aside. Call me a sinner but I prefer simply to heat up pre-cooked bacon from Trader Joe’s to keep my van and all belongings smelling like bacon for a week.
- Melt butter over medium/high heat and crack egg into the mason jar ring. Once egg is set, remove ring, flip, and sprinkle grated cheese overtop.
- While egg cooks, assemble bagel with smeared avocado slices, fresh cilantro, arugula and bacon slices.
- Once egg is cooked to desired hardness remove from skillet and add to bagel assembly.
- Melt more butter over low/medium heat and fry sandwich until the bagel/bread becomes toasted and crispy.
- Write a letter to your local Einstein’s informing them that their breakfast sandwich has nothing on yours.
