Black Bean Dip

There is no shame in eating the entire batch with a spoon.

Ingredients:

  • 1 can of black beans – juice included
  • A spoonful of tomato paste
  • A dash of apple cider vinegar or juice of 1 lemon
  • 1 small bell pepper
  • 1/2 fresh jalapeño – seeds removed
  • 2 cloves of garlic
  • A hefty pinch of chili powder
  • Salt to taste
  • Cilantro to garnish

Directions:

Blend all ingredients (except for cilantro**) to desired consistency. Garnish with fresh cilantro. Spread on tacos, corn chips, fresh veggies, eggs, or eat by the spoonful.
