Black Bean Dip
There is no shame in eating the entire batch with a spoon.
Ingredients:
- 1 can of black beans – juice included
- A spoonful of tomato paste
- A dash of apple cider vinegar or juice of 1 lemon
- 1 small bell pepper
- 1/2 fresh jalapeño – seeds removed
- 2 cloves of garlic
- A hefty pinch of chili powder
- Salt to taste
- Cilantro to garnish
Directions:
Blend all ingredients (except for cilantro**) to desired consistency. Garnish with fresh cilantro. Spread on tacos, corn chips, fresh veggies, eggs, or eat by the spoonful.
