Pumpkin Spice Latte
No shame in my PSL game… this sh!t is delicious! Using a blender gives this seasonal special an airy, frothy consistency without the pricey coffee shop steamer.
Ingredients:
- 2 shots of espresso – I make this in my cute little moka pot
- A spoonful of pumpkin purée
- A spoonful of coconut cream
- 1 cup water
- A dash of pumpkin spice, OR any/all of the following ground spices:
- Cinnamon
- Nutmeg
- Clove
- Ginger
- Allspice
Directions:
- Heat pumpkin purée, coconut cream, water and spices over medium/high heat until just before boiling.
- Pulse hot mixture with espresso in a blender. 3-4 pulses will do!
- Top with a sprinkle of cinnamon and enjoy with a crossword puzzle from the comfort of your bed.
