Pumpkin Spice Latte

No shame in my PSL game… this sh!t is delicious! Using a blender gives this seasonal special an airy, frothy consistency without the pricey coffee shop steamer.

Ingredients:

  • 2 shots of espresso – I make this in my cute little moka pot
  • A spoonful of pumpkin purée
  • A spoonful of coconut cream
  • 1 cup water
  • A dash of pumpkin spice, OR any/all of the following ground spices:
  • Cinnamon
  • Nutmeg
  • Clove
  • Ginger
  • Allspice

Directions:

  1. Heat pumpkin purée, coconut cream, water and spices over medium/high heat until just before boiling.
  2. Pulse hot mixture with espresso in a blender. 3-4 pulses will do!
  3. Top with a sprinkle of cinnamon and enjoy with a crossword puzzle from the comfort of your bed.
