Pumpkin Spice Stewed Apples
Since oatmeal does not sit well with me, these stewed apples fill the void of a warm, porridge style breakfast on a chilly day. This dish be enjoyed by itself, or can be used to spice up a chicken breast, quinoa bowl, or even a burrito.

- Heat source
- Small sauce pan
Ingredients
- 1 apple
- 1 tsp pumpkin pie spice or any combination of cardamom, nutmeg, cinnamon, cloves, all spice
- 1 tsp dried turmeric
- 1 tsp vanilla
- 1/4 cup water
- pinch of sea salt
Optional toppings:
- nuts: walnuts, almonds, hazelnuts, etc.
- seeds: chia, flax, pumpkin, sunflower, etc.
- hemp hearts
- coconut flakes
Directions
- Slice apple into quarters, remove core and seeds and dice into small cubes
- In a small saucepan, combine all ingredients. Add enough water to cover the apples about halfway up.
- Bring to a simmer over medium heat until the water has evaporated into a syrupy consistency and apples are softened.
- Top with your fav toppings and warm up from the inside out.
