Pumpkin Spice Stewed Apples

Since oatmeal does not sit well with me, these stewed apples fill the void of a warm, porridge style breakfast on a chilly day. This dish be enjoyed by itself, or can be used to spice up a chicken breast, quinoa bowl, or even a burrito.

Servings: 1 | Time: 10 minutes

Tools

  • Heat source
  • Small sauce pan

Ingredients

  • 1 apple
  • 1 tsp pumpkin pie spice or any combination of cardamom, nutmeg, cinnamon, cloves, all spice
  • 1 tsp dried turmeric
  • 1 tsp vanilla
  • 1/4 cup water
  • pinch of sea salt

Optional toppings:

  • nuts: walnuts, almonds, hazelnuts, etc.
  • seeds: chia, flax, pumpkin, sunflower, etc.
  • hemp hearts
  • coconut flakes

Directions

  1. Slice apple into quarters, remove core and seeds and dice into small cubes
  2. In a small saucepan, combine all ingredients. Add enough water to cover the apples about halfway up.
  3. Bring to a simmer over medium heat until the water has evaporated into a syrupy consistency and apples are softened.
  4. Top with your fav toppings and warm up from the inside out.
Water should cover the apples about half way up. You’ll know its finished when the water takes on a syrupy consistency.
