Shiitake Mushroom “Poke”

Poke (pronounced po-kay) is a traditional Hawaiian dish of diced raw fish served over rice and vegetables and packed with umami flavors.

Since moving into the van, my tolerance for clean dishes has significantly dropped… so I tend to stay away from cooking with meat and fish 🙂 Mushrooms have become my main meat/fish replacement.  They contain all 8 essential amino acids and are chock-full of energy boosting B vitamins, as well as a laundry list of other vitamins and minerals.  When sautéed, shiitake mushrooms take on a texture very similar to that of raw fish.  Add some umami sauces and you have yourself a vegetarian poke-style bowl.

Ingredients:

1 pound shiitake mushrooms

1/2 c. Mirin or Rice Wine Vinegar & 1 spoonful sugar

1/4 c. soy sauce

Favorite Cooking Oil

A dash of sesame oil

1/2 Avocado

A Pinch of:

Sesame seeds

Crushed Red Pepper

Flaky Seasalt

Directions:

  1. In a large frying pan, combine mirin and soy sauce. Cook on medium/high heat until sauce thickens enough to coat the back of a spoon – appx. 5 minutes
  2. Transfer sauce mixture to a bowl. Set aside.
  3. Add cooking oil to frying pan.  Once it heats up, add mushrooms.  Stirring occasionally, sauté mushrooms until they shrink to half their original size – appx. 5 minutes.  Add sesame oil.  Cook another 5 minutes or so.
  4. Remove mushrooms from heat and gently fold them into sauce mixture.
  5. Add avocado slices and garnish with sesame seeds, crushed red pepper and flaky sea salt.
  6. Enjoy and be blown away at how good mushrooms can taste 🙂
