
Beet Salsa
Ya gotta trust me on this one.
Ingredients:
- 2 medium sized tomatoes, chopped
- 1 medium sized beet, chopped and boiled
- 1 fat clove of garlic, minced
- 1 lime, juiced
- 1/2 fresh jalapeño
- Fresh cilantro
- Salt to taste

Directions:
- Cut the greens and tail off of beet. Chop into small squares and boil until penetrable with a fork, 10 minutes.
- Strain the beets and combine with remainder of ingredients. Since nutrients leech into the boiled water, be sure to save the hot water and throw a tea bag in 🙂
- Refrigerate for 15-30 minutes to let flavors combine. Enjoy with Juanitas, the only corn chip you’ll ever need.
